Ingredients:
700 gm (1½ lbs) beef or mutton
1/3 cup finely chopped onion
½ tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon chilli powder
1/ teaspoon ground black pepper
2 teaspoons ground ginger
1 teaspoon ground garlic
3 sticks 2.5 cm piece cinnamon
4 cardamoms
4 cloves
2 bay leaves
1 cup cooking oil
500 gm (1½ lbs) pullao rice
8 green chillies
1/2 cup shelled green peas
Salt to taste
Preparation:
1. Cut the meat into small cubes. Except the rice, green chillies and peas place all other ingredients in a saucepan.
2. Add 2 cups of water. Cook over a low heat till meat is tender.
3. Stir and fry the meat for 10 minutes over a low heat.
4. Add rice, 3½ cups of hot water, chillies and peas. Stir, cover and cook over moderate heat for 18-20 minutes.
5. Remove from heat and keep covered for 15 minutes.
Serve with salad or borhani. 4-6 servings.
