
Ingredients:
i. 2 cups diced tomato
ii. 2 tablespoons mustard oil
iii. 1/2 tablespoon fenugreek
iv. 1/2 tablespoon cumin seeds
v. 2 tablespoons chopped onion
vi. 1 dry red chilli
vii. 2 green chillies, chopped
viii. 1 tablespoon minced ginger
ix. 1/2 teaspoon minced garlic
x. 1/2 tablespoon ground turmeric
xii. 1 tablespoon chopped mint leaves
Salt to taste
Preparation:
* Heat the oil. Put in the red chilli, fry light and crisp and remove. add the fenugreek and cumin seeds in the hot oil and sizzle for a few seconds.
* Add the onion and green chillies, stir for 5 seconds. Add the ginger, garlic and turmeric, stir and fry the onion light brown and soft.
* Add the tomatoes and salt, stir, cover and cook over moderate low heat. When tomato is cooked and little gravy appears add the mint leaves. Remove from heat. The recipe has been cooked.
Serve hot with fluffy rice, bread, parata etc.
