
Ingredients:
1 kg (2 lb) chicken,
2 teaspoons ground ginger,
1/2 teaspoon ground turmeric,
1/2 teaspoon chilli powder,
1/2 teaspoon ground coriander,
1/2 cup finely chopped pineapple,
2 sticks 2.5 cm piece cinnamon,
3 cardamoms,
2 cloves,
1 bay leaf,
3-4 green chillies, pared,
1/2 cup cooking oil,
Salt and sugar to taste.
1. Skin the chicken and cut into 10 pieces. Heat the oil in a wok. Fry the onion light brown. Add the chicken and stir-fry for 2 minutes.
2. Add the spices, stir and fry for 5-7 minutes. Add the pineapple, green chillies, sugar and salt.
3. Keep over moderate heat. Stir from time to time. When oil separates out remove from heat.
Serve hot with boiled fried rice, chapatti etc. Yields 5-6 servings.
