
1 × 1.5 kg (3 lb) chicken,
2 bay leaves,
1/2 cup roughly chopped onion,
1/2 cup cooking oil,
Salt to taste.
Cooking Process:
1. Take the neck of the chicken out of the skin and cut off. Remove guts, liver etc. from inside and clean the chicken. Wash and pat dry with kitchen paper.
2. Place the chicken in a saucepan, add bay leaves, onion, oil and salt. Cover and cook over medium heat. From time to time turn over the chicken. When the chicken fries golden brown, then lower heat and cook for 15 minutes.
3. Transfer the chicken with gravy on to an over proof dish. Add 1 cup of water. Keep the dish in a pre-heated oven 1800C (3500F) until the water has gone. During this time turn over the chicken once or twice.
Serve hot with parata or pullao. 6 servings.
