Daal is a rich source of proteins and is extremely easy to cook. Adding Spinach to it makes it more healthy.
Cook the Yellow Moong dal till they are soft. In a Sauce pan, heat oil and add Mustard seeds, cumin and Red chillies and fry for 2 minutes. Add chopped palak and fry for another 2 minutes.
Add Ginger, Garlic, Green chillies and fry for another minute. Then add cooked daal, Turmeric and salt, cover the lid and bring to boil.
Serve hot with Roti or Rice.
