FRENCH BEAN AND GARLIC FRY


Once upon a time, cooking used to give me lot of thrill and happiness.
Those days , after working 10 to 12 hrs , I used to come back and used to relax by cooking many dishes. Now that I am retired and don’t find as much thrill in cooking , because there is nothing to relax about while cooking , because I am relaxing 24hrs
THE RECIPE: This is a down market recipe and I like it any time . ( I have recently learnt the word “ down market, and using it indiscriminately ) It is a simple stir fried bean recipe with a flavorful tempering of Fennel and dry red chili. You can give tempering of methi seeds, kala jeera ( Nigella) or cumin etc …Adding garlic is optional so also the potato.

INGREDIENTS
French beans 250 gram, chopped to 1 inch size
Garlic 6 fat cloves, each cut coarsely to 6 pieces from each clove
Potato, 50-75 grams diced nicely to ½ inch ( you need not add , optional)
Fennel seed for tempering 1 level tsp
Red chili 2 for tempering
Turmeric 1 level tsp
Oil 1 to 2 tbsp (not more)
Red chili powder 0 to 2 level tsp (your choice)
Green chili 2-4

PROCESS
Heat oil and give the tempering of fennel and red chili
Add the potato and fry for few minutes.
Add the garlic and sauté for 2 minutes and add the beans and the whole green chili.

Add salt and turmeric, mix well, add ½ cup water and cover.
Simmer on low flame for 8-10 min or till the potato is done.

Open the lid, and brisk fry at high flame, till all water goes and the beans are slightly discolored due to frying.
Add red chili powder ( if you want to ) , fry for 2 minute on medium flame.
Add 2 tbsp water , mix and switch off burner
Eat with rice or with roti parathha .
